Wife working late: Empanadas for All

My wife was going to be working late so last Sunday we put together a dozen quick empanadas. For the dough

  • 2 cups flour
  • 1 tsp baking powder
  • pinch of salt
  • 1/2 cup shortening
  • 1/2 cup milk

Mix together first three ingredients in food processor to combine. Add shortening and whiz until it looks like course ground meal. Add milk and whiz until the dough comes together. Cover with plastic wrap and let rest for about 30 minutes while you make the filling

We tend to eat a lot of bison and duck when we can find it. So these were bison empanadas.

  • 1 lb ground bison
  • 1/2 onion
  • 1 cup thinly sliced red and yellow peppers
  • 1/3 frozen peas
  • salt and pepper
  • pinch of cumin and coriander

Saute bison with onion and peppers until just cooked. Add frozen peas and spices. Remove from heat.

Preheat oven to 350 degrees. Divide dough into 12 pieces and roll out into about a 5 inch round. Place a couple tablespoon of filling in each and fold over into half moon using fork tines to seal. Whisk an egg in a small bowl. Place the empandas on a parchment lined baking sheet and brush on egg. Bake for about 30-40 minutes or until golden brown

We like ours with a little chimichurri sauce. For us this is another one of those clean out the herbs in the drawer.

  • bunch of cilantro
  • bunch of parsley
  • couple green onions
  • 2 gloves of garlic
  • small chili
  • salt
  • whatever other fresh herbs you have
  • 1/4 cup of your favorite vinegar (we use rice wine)
  • 1/2 cup olive oil

Whiz it all up in the food processor.

Serve empanads with chimichurri.
