Quiche: It’s what’s for dinner

While we made Chili last weekend, we also made a quiche to have an easy dinner later in the week. Super easy and only about 2 minutes of active time. This time we had a ton of spinach we were using for salads and needed to use it up. So quiche Lorraine with spinach.

  • 2 frozen pie crusts (we found some whole wheat ones that were really good last week at Wholefoods)
  • 8 eggs
  • 4 ounces ham
  • 4 ounces shredded Guyere
  • 2 handfuls of baby spinach
  • Salt and Pepper

Preheat oven to 350. Mix all the ingredients together and divide between the two pie crusts. Bake until a toothpick comes out clean, about 30-40 minutes.

We served it with a salad with lemon dressing to cut through all of the eggs, ham, and cheese.
