
It’s my birthday and my wife is cooking tonight. I really like simple foods as was given the choice for dinner so baked fish, garlic noodles, and broccoli slaw. Nothing too fancy just simple, well cooked food. For the dressing for broccoli slaw:
- 1 1/2 C refrigerated coconut milk
- salt and pepper
- 1/8 C white wine vinegar
- 1/8 C Mirin rice wine
- 1/8 C olive oil
- 1/2 lemon, juiced
Mix the dressing into:
- 1 bag broccoli slaw mix
- 5 green onions, thinly sliced
- handful cilantro
Let sit in fridge for a few hours, stirring occasionally.
For the garlic noodles
- 1 bag egg noodles
- 1 Tbsp canola oil
- 4 Tbsp unsalted butter
- 4 cloves garlic, minced
- 1 C goat milk
- 2 eggs
- salt
- nutmeg
- big handful pecorino romano
Boil noodles with canola oil. Drain. In same pot add butter and garlic and saute quickly. In separate bowl mix milk, eggs, salt, nutmeg, and cheese. Add noodles to butter and garlic. Mix in milk and egg mixture and put in a loaf pan in 300 oven for about 40 minutes
For the trout:
- 2 whole trout, filleted
- olive oil
- salt
- squeeze lemon juice
Put trout in 9×13 pan and pour over olive oil, salt and lemon juice. Bake at 300 for about 30 minutes. And I got an apple tart with ice cream for desert.
