London broil, roasted potatoes and sauteed asparagus

Busy Tuesday finishing a report and trying to keep other work going so yet again a simple Midwestern dinner. Nothing special just clean, simple food. As is usual in our house, I get up early and try to not wake anyone up. So making a marinade had to be quiet, so I decided to do a simple miso, soy, and garlic powder. No chopped, no noise. Simple coat the beef in a thin layer of miso then add a bit of mirin, soy, and garlic powder while it sits in a large Tupperware. Put in fridge and let it get flavorful all day while working.

For the potatoes

  • 8 russet potatoes, peeled and cut into 4-8 pieces depending on size
  • glug of olive oil
  • salt and pepper
  • garlic powder

Roast in 375 degree oven for 30-45 minutes or until a knife pierces easily.

For the asparagus, simply cut of the woody ends and saute in olive oil, salt and pepper. Make sure you err on the side of under cooking rather than over cooking.
